Sweet Potato Pancakes
These are great for your kiddos! They are especially nice for those early self-feeders. Double the recipe and freeze in individual freezer bags with 2 pancakes.
Ingredients:
1 cup water
1/2 cup sweet potato puree
1/2 tsp cinnamon
1 cup pancake mix (I like Stonewall Kitchen Farmhouse Pancake and Waffle Mix-no soy or ingredients you can't pronounce. I purchased mine at Whole Foods).
Nonstick cooking spray
Directions:
Mix and measure out about 1/3 cup mix for each pancake. Cook as you would regular pancakes. For those following the Sensibalance program, they are only 2 Carbohydrate Food BARS for 2 pancakes.
Serves 3 (2 pancakes each serving)
